Current Cooking

Basic Salmon Loaf

1-15 1/2 ounce can salmon

2 cups soft bread crumbs

1/3 cup finely minced onions

1/4 cup milk

2 large eggs

2 tablespoons lemon juice

1/4 teaspoon salt

1/4 teaspoon dill weed

Dash black pepper

Dash garlic powder

 

Drain and flake salmon, reserving 2 tablespoons liquid. Combine salmon with all other ingredients.

 

Spoon into well-greased 8 1/2 X 4 1/2 X 2 1/2 inch loaf pan. Bake at 350 degrees for 45 minutes. Yields 4-6 servings. (For salmon patties:   prepare salmon mixture as for loaf, but shape into 8-1 inch patties. Pan fry on both sides in oil or butter until golden brown.)
