Current Cooking

Okra Fritters

1 cup thinly sliced okra

1/2 cup chopped onions

1/2 cup chopped tomatoes

1/4 cup all-purpose flour

1/4 cup cornmeal

1/2 teaspoon salt

1/2 teaspoon curry powder

1/4 teaspoon pepper

1 egg beaten

Hot vegetable oil

 

Combine first nine ingredients. Stir well.  Drop by tablespoonfuls into hot oil. Cook until golden brown, turning once. 

 

Yields approximately 6 servings.

Handy Tip

 

Halogen bulbs used in torchiere lamps generate excessive heat, creating a fire hazard.   Switch to compact fluorescent bulbs that run cooler and use less electricity.
