Current Cooking

Rocky Road Brownies

 

1 package fudge brownie mix

1-10 1/2 ounce package of miniature marshmallows

2 cups (12 ounce package) semi-sweet chocolate chips

1 cup creamy peanut butter

1 tablespoon butter or margarine

1 1/2 cups Rice Krispies

 

Prepare brownies according to the fudgelike brownies directions on the package. Bake in a 13 X 9 X 2 inch pan for 30 minutes at 350 degrees.

 

Top with marshmallows and bake for three minutes longer. Marshmallows will not be completely melted. Cool on a wire rack.

 

In a saucepan, combine chocolate chips, peanut butter and butter.  Cook over low heat until melted (can also be done in microwave at 70 to 80 percent power). Remove from heat and stir in Rice Krispies.

 

Spread over cooled brownies. Refrigerate 2 to 3 hours before cutting.
